Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1/2 cup corn
  • 1/2 cup diced bell pepper (red, yellow, or orange)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic, cumin, chili powder, and smoked paprika and cook for 1 minute more.
  3. Add vegetable broth, black beans, corn, and bell pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with fresh cilantro.
